How To Make The Delicious Ofada Stew (AYAMASE SAUCE)
AYAMASE SAUCE!!!🥘
AYAMASE SAUCE is another name for Ofada stew. It is a traditional Nigerian dish popular among the Yoruba. It is typically cooked with a blend of assorted meat popularly known as 'INU ERAN' and a variety of peppers, which is why it is the hottest of all hot and spicy foods in Nigeria.
Ingredients.
Unripe habanero pepper (Ata rodo)
Unripe tatashe pepper.
Locust beans (Iru)
Red Oil
Onions
Assorted meat (Beef, Shaki, Roundabout, Ponmo)
Smoked Fish/Cray Fish
Boiled Eggs
Salt/Seasoning
STEP ONE
Rinse the habanero pepper, tatashe, and onions, then cut them into little pieces and blend with the pepper combination.
STEP TWO
Pour the mixed Pepper into a pot and cook until most of the water has evaporated.
STEP THREE
Add the palm oil to a clean pot, cover it, and cook it on low to medium heat until the oil turns honey-brown in color. (Bleached oil)
STEP FOUR
Add the diced onions and locust bean (Iru) and let it fry for some minutes.
STEP FIVE
Pour in the boiled pepper mixture, Add your grounded crayfish, salt, seasoning, and other ingredients. Stir everything together, cover it, and heat until the pepper sauce starts to float with oil.
STEP SIX
Add your smoked fish, assorted meats, and boiled eggs. However, note that adding some beef stock will help thin down a sauce that is excessively thick. Give it 3-5 minutes to cook.
