Nigerian Meat Pie Dough
8 cups [1kg] of plain flour [all purpose flour].
2 teaspoons of baking powder.
125 ml [½ cup] of cold water.
500g of margarine.
2 pinches of salt.
Nigerian Meat Pie Filling
500g of minced meat.
2 medium-sized Irish potatoes.
2 medium-sized carrots.
1 medium-sized onion.
2 tablespoons of plain flour.
2 cooking spoons of vegetable oil.
2 cubes of seasoning [Maggi or Knorr].
1 teaspoon of thyme.
250ml [1 cup] of cold water.
Salt.
How to Prepare Nigerian Meat Pie
For The Nigerian Meat Pie Filling
Peel the Irish potatoes, scrape the carrots, wash and cut them into tiny cubes.
Wash the onion and dice them into small pieces.
Set your cooker to medium heat. Heat the vegetable oil in a pot, add the diced onion and stir for a while.
Then add minced meat and continue stirring till the minced meat turns pale.
Add 1 cup of water, thyme and seasoning cubes [Maggi or Knorr] and cover the pot.
When the contents of the pot start boiling, add the diced carrots and potatoes, and cook till everything gets done.
Pour 2 tablespoons of plain flour of half cup of cold water and add to the meat pie filling. This prevents the meat pie filling from drying up during baking.

Set your oven to 170 celsius and leave to preheat.
Then rub margarine on the insides of your oven tray. This prevents the undersides of the meat pie from burning or sticking to the tray during baking.
Break the egg, beat it and set aside.
Knead the dough again and roll it out to get a 5mm thickness.
Use a cutter [you can use the cover of a small pot or a meat pie cutter] to make round cuts on the already rolled out dough.
Remove the excess dough and leave the round cuts.
